Giant Salted Caramel Cupcake

This was made for a colleague’s birthday (now an unwritten tradition in my office). As it was their 30th, I felt it important to make something special. I had made some salted caramel cupcakes (not yet on this blog) which when down a storm. Then the idea came into my head to make one on a giant scale.

I did a quick online search and I couldn’t find any recipes for a giant cupcake. That made me quite pleased that I thought of something close to original. I think I used a standard salted caramel cupcake mixture and cooked in the cupcake mould. Similarly I used a whole ‘Dr. Oetker Surprise Inside Cupcake Centres’ into the whole cake.

I can’t quite remember how I made the icing (I seem to remember baking late into the night and being thwarted  by opening the Dr. Oetker packaging. I must have used the wrong type of sugar (probably all brown sugar and little or no icing sugar) as it was very grainy and didn’t provide any lightness or colour contrast.

But it went down really well in the office. For some reason I cut strips instead of wedges. It was exciting cutting the slices and then reaching the gooey centre (although I did feel bad for those people who got the early slices).
